OUR CHEFS
We have a talented, eager, calm, adaptable and skilled team in our kitchen here at Zuka!
Leading the kitchen is Andries, assisted by Sphe. They produce beautifully executed, flavoursome, family style breakfasts, lunches, dinners, birthdays, beach trips, a picnic in the bush, and anything that can be home-made; the deliciousness never ceases! Andries has a deep interest in healthy eating, has learned much about gluten free, plant based and “clean” eating to tailor any specific dietary requirements with his famous ease and enthusiasm
Our regular guest chef at Zuka is Siobhan Belton (Diploma in Holistic Nutritional Coaching from the Academy Of Healing Nutrition) who brings her huge experience and expertise. Having trained and worked all over the world as a Fine Dining Plant Based Nutritionist Chef, and developed a Longevity Diet, she is hands on in the Zuka kitchen. With her abounding energy and skills, Chef Shiv imparts her knowledge and creativity, leaving our Zuka team another notch higher in confidence, and talent to produce fabulous food!

For inspiration we turn to our favourite icons, Ottolenghi, Nigella, Donna Hay, Jamie Oliver, Gweneth Paltrow, and Deliciously Ella to name a few, and for the important, foundational or advanced it has to be Delia Smith and Prue Leith!
Andries and the team never stop creating and developing our signatures including homemade ice-creams, cookies, granola, health bites, salads, desserts and fire-food (our open fire cooking in the bush as the sun goes down) and the crucial perfecting of our own gluten free pizza bases so you don’t have to turn down a little wood fired comfort food under the stars!
FARM TO TABLE
We recently acquired 25 hectares on the boundary of Zuka Private Game Reserve to start our regenerative agriculture farm. Khula Farm is growing healthy organic vegetables, salad, producing eggs, harvesting honey and we have much more on the way in the coming seasons.
We are thrilled that our regenerative farming initiative supplies delicious ingredients to our guests and the wider reserve while crucially, improving top soil quality that gives so much back to the earth.


POSITIVE HEALTH
Simultaneously, Andries puts his energy and well respected personality into the Positive Health programme, which started in 2010. This is an initiative that educates staff and the wider community on all aspects of eating and lifestyle to promote a healthy mind and body. Andries, ever actively engaged in Positive Health, is renowned for his role and commitment to this programme.
